A few years ago I met this really nice jewish lady who gave me her recipe for a Jewish Apple Cake. She told me that it was her hubby's favorite homemade cake and since my hubby loves anything apple flavored, I was excited to try out her cake recipe. I made this cake last week (sorry, I forgot to get a photo) and my hubby loved it, so I thought I would share her recipe with all of you.
Jewish Apple Cake Recipe
3 cups all-purpose flour, sifted
2 cups granulated sugar
3 teaspoons baking powder
1 cup vegetable oil
4 large eggs, unbeaten
1/4 cup orange juice
3 teaspoons vanilla extract
5 small apples, skins removed and chopped
2 teaspoons ground cinnamon
5 tablespoons granulated sugar
In a large mixing bowl beat together the flour, granulated sugar, baking powder, vegetable oil, large eggs, orange juice and vanilla extract until well combined. Pour cake batter into a tube pan. In a large mixing bowl combine toss together the chopped apples, ground cinnamon and granulated sugar. Pour the apple mixture on top of your cake batter in the tube pan. Place tube pan in a preheated 350 degree oven and bake for 60 to 70 minutes or until done.
