If you are looking for a yummy cookie recipe that doesn't take a lot of baking effort, these forgotten cookies are for you! My family has been making them for at least the past 25 or 30 years!
Homemade Forgotten Cookies Recipe
2 large egg whites
1/2 cup granulated sugar
1 cup semi-sweet chocolate chips or butterscotch chips
1/2 cup chopped peanuts
1 teaspoon vanilla extract
In a large mixing bowl beat the large egg whites until creamy. Gradually stir in the granulated sugar and beat with an electric mixer until fluffy and stiff. Stir in the chocolate chips by hand and then the chopped peanuts and vanilla extract. Drop onto lightly-greased baking sheet by rounded tablespoonful.
Preheat oven to 350 degrees F. Place baking sheet into the oven and turn off the oven 1 minute after you place the baking sheet into it. Let baking sheet stay in the oven for 6 to 8 hours, do not open the oven door. Remove from oven after several hours have passed and store cookies in an airtight container.
