We love potatoes and we love making them a variety of different ways so that we never get tired of them. We serve a potato side dish with 3 to 4 meals every week and this recipe that I got from my sister is one of our favorites. This recipe will make approximately 4 servings and is great reheated the next day if there are any leftovers left. Just reheat in the microwave or your conventional oven.
Baked Cheesy Potato Casserole Recipe
8 red potatoes, sliced
2 large onions, sliced
1/2 cup butter, softened
1 cup shredded cheddar cheese
1/2 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon ground black pepper
In a large bowl mix sliced potatoes, sliced onions, softened butter and garlic salt together. Add salt and ground black pepper to taste. Grease a large casserole dish. Place potato mixture in casserole. Cover with aluminum foil. Bake in preheated 350 degree oven for 40 minutes stirring occasionally. Remove from oven and remove aluminum foil. Sprinkle with cheese. Return to oven, uncovered and continue baking until cheese has melted and potatoes are fork tender, approximately 10 minutes.
