During the summertime I make a lot of cole slaw for my family to enjoy. In addition, we are always hosting some time of get-together here at our home and cole slaw is always requested. Here is one of the recipes that I enjoy making.
Creamy Cole Slaw
1 cup reduced-fat mayonnaise
1/4 cup milk
2 tbsp. granulated sugar
1 tsp. salt
1/2 onion, finely chopped
1 head of cabbage, shredded
1-2 carrots, shredded
1 green pepper, finely chopped
Mix mayonnaise, milk, sugar and salt. Add remaining ingredients and blend well. Refrigerate for 3 to 6 hours before serving. You always want to serve cole slaw chilled, so don't let it sit out for hours at a time which can spoil it.
