How many of you love mashed potatoes? I think that most people do! Some people like them a little bit chunky and others like them smooth & creamy...like me! We make mashed potatoes at least twice a week here in our home and when we make them...we use the Country Crock recipe. Sometimes we enjoy them with just melted Country Crock on top and at other times we will whip up a delicious tasting gravy.
On Thanksgiving we made a HUGE pot of them and actually tripled the recipe, so that we would have enough for our dinner guests to enjoy. If you love creamy mashed potatoes...you'll love their recipe!
Tip: If you want to save time on a holiday or busy week...peel your potatoes the night before and place them in a big bowl of water, covered in your refrigerator overnight. Don't slice or chop them! The next day when you're ready to use them...just drain out the water and let them sit at room temperature for about 10 minutes and then chop or slice them for cooking or frying. It's a big time saver, especially when preparing big batches for holiday meals.
Country Crock Creamy Mashed Potatoes Recipe
3 medium potatoes (about 1-1/4 lbs.), peeled and cut into chunks
1/4 cup Country Crock® Spread
1/4 cup milk
1/4 tsp. salt
1 pinch ground black pepper
Cover potatoes with water in 2-quart saucepan. Bring to a boil over high heat. Reduce heat to low and simmer uncovered until potatoes are very tender, about 15 minutes; drain. Return potatoes to saucepan; mash. Stir in remaining ingredients.Serve immediately.

Thank your for the recipe. I love creamy mashed potatoes and these potatoes have less fat than in many other recipes . I also appreciate the tip for soaking potatoes overnight.
