My husband and I love eating tuna salad but since we are both on diets and cutting down our consumption of bread & rolls...we have been enjoying our tuna salad stuffed in red or yellow tomatoes. Now that we have been eating it that way, we prefer it! Here is how we make it.
2 large or 4 medium tomatoes
1 can flaked tuna in water, drained
2 hard boiled eggs, shells removed & chopped
2 tablespoons finely chopped onion
2 tablespoons finely chopped celery
reduced-fat mayonnaise
tomato pulp (from the hollowed out tomatoes)
salt
ground black pepper
fresh dill
Hollow out your tomatoes; place tomato pulp into a medium sized mixing bowl. If needed, chop the pulp into small pieces. Stir in the drained, flaked tuna, chopped hard boiled eggs, chopped onion, chopped celery, reduced-fat mayonnaise, salt, ground black pepper and freshly chopped dill. I didn't give measurements on those as it is per your own taste buds. Stir everything up until mixed well together. Cover bowl and refrigerate for one hour.
Spoon tuna salad into the hollowed out tomatoes and top with chopped fresh dill. Serve immediately. Also, we use whatever fresh tomatoes we have on hand from our garden. Sometimes we use red ones or yellow ones.

In love a healthier way to eat tuna salad and I do enjoy eating tomatoes too , so this recipe should be perfect for my family.
