Looking for a really nice dessert cake to make but looking for something a little different? If so, you should try my aunt's homemade raspberry coffee cake! My aunt was always entertaining her lady friends and this is one dessert cake she used to make often for them.
Homemade Raspberry Coffee Cake Recipe
8 oz. can pineapple chunks
2 tablespoons all-purpose flour
1 tablespoon brown sugar
1 tablespoon butter
1/2 teaspoon ground cinnamon
1/4 cup butter
1/3 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup sifted all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup milk
1/3 cup raspberry jam
Drain juice from the can of pineapple and place them on a paper towel to help dry them up. Blend 2 tablespoons brown sugar, 1 tablespoon butter and ground cinnamon until crumbly. Set aside, this will be used for the topping.
Cream together 1/4 cup butter, 1/3 cup granulated sugar, large egg and vanilla extract until creamy. In another bowl sift together the all-purpose flour, baking powder and salt. Blend dry mixture into the creamed mixture alternating with the milk and stirring after each addition. Stir in the pineapple chunks.
Preheat oven to 350 degree. Pour cake batter into a greased and lightly floured 8" round cake pan. Dot with raspberry jam and then swirl the raspberry jam through the cake batter using a teaspoon. Sprinkle the topping on top of the cake. Place cake pan into a preheated oven and bake for 30 to 35 minutes or until done.
