Here is a great recipe if you are going to roast up one or two whole chickens and bake them or roast them on the grill. This recipe happens to be one of my husbands favorite stuffing recipes and his mother has been making it for years.
Homemade Chicken Stuffing Recipe
1/2 lb. chicken livers and all of the giblets from 2 small whole chickens
2 small uncooked whole chickens
1 medium onion, finely chopped
1/2 cup butter
1 teaspoon salt
1/2 teaspoon dried sage
1 teaspoon ground black pepper
2 large eggs, beaten well
1 large loaf of bread cut up into cubes
In a large skillet, simmer the chopped chicken livers and chicken giblets in the butter until done. Remove from heat. In a large mixing bowl combine together the cooked chicken livers & giblets along with the rest of the ingredients in the recipe. Toss everything together until the bread cubes are well coated. If it seems a little dry you can stir in some chicken stock. Once it is ready split it into 2 bowls and stuff each of your small chickens with the stuffing.
You can now roast your chickens in the oven or on a hot grill.
