We love homemade rice pudding but yesterday I didn't have time to make it completely from scratch. Instead I purchased a box of Jell-o Cook & Serve Rice Pudding and doctored it up to our liking. Here is how I made our pudding and you can serve it warm or cold.
Rice Pudding with Ocean Spray Craisins Recipe
1 (3.4 ounce) box Jell-o Cook & Serve Rice Pudding
2 cups fat-free milk
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup Ocean Spray Craisins (dried cranberries)
Follow the directions printed on the box of Jell-o Cook & Serve Rice Pudding to make the pudding using the 2 cups of fat-free milk. Turn off heat from stove and stir in the ground cinnamon, ground nutmeg and the 1/4 cup of Ocean Spray Craisins. Let pudding cool for 5 minutes in your saucepan and then spoon it into a serving bowl. It will set up as it is cooling. Place lid on bowl and store in the refrigerator.
This can be served warm or cold, we prefer it cold but that is entirely up to you on how you like it. You can substitute plump juicy raisins for the Craisins if you prefer those.
