Vintage Sweet Potato Muffins Recipe

Today I am sharing with all of you another great vintage recipe that was given to me over 25 years ago by my great aunt. She had been making this recipe for years before she even gave it to me! This is a great Sweet Potato Muffins recipe that goes well with your fall & winter holiday meals but if you are like me and just love muffins...you can make this recipe year round. It will make 13-15 muffins.

Sweet Potato Muffins Recipe

1 1/2 cups all-purpose flour
1 tbsp. granulated sugar
5 tsp. baking powder
1/2 tsp. salt
2 large eggs
1 cup milk
1 cup canned sweet potatoes puree
1/2 cup melted shortening

Sift together the flour, sugar, baking powder and salt. Beat in the eggs; add the milk. Stir in the sweet potato puree, beat mixture until smooth. Fold in the melted shortening and stir everything together until well combined. Lightly grease your muffin tin or line with paper baking cups. Fill the cups 2/3 of the way full and bake in a preheated 350 degree oven for 15 to 20 minutes or until done. Serve with butter or honey butter.
