Guacamole Deviled Eggs Recipe
2-3 Tablespoons of Wholly Guacamole ~ Classic Style
3 Tablespoons of Low-Fat Mayonnaise
1 1/2 teaspoons Dijon Mustard
pinch of salt
pinch of ground black pepper
1 teaspoon granulated sugar
6 hard-boiled eggs, sliced in half + yolks
*optional: finely chopped chives and/or ground paprika
I placed the 6 cooked egg yolks into my Tupperware Quick Chef along with the mayonnaise, mustard, salt, pepper, granulated sugar and then added the guacamole. You can add as much or as little guacamole that you would like but I typically add 2-3 tablespoons per 6 whole eggs. I use my Quick Chef as it does a nice job at chopping and mixing it all together but you can certainly use just a fork and spoon to mash and mix your egg filling. Once your filling is nice and creamy use a butter knife to place it into your egg halves.
Serve immediately or refrigerate them until serving time. If desired...you can sprinkle some paprika or finely chopped chives on top of each egg half.
