I am not a big fan of eggplant but my husband really enjoys it. Every summer we plant a few eggplants in our garden and then once we harvest them we make this particular recipe.
Baked Eggplant Recipe
1 large eggplant
3 medium eggs
1/4 lb. crackers or bread crumbs
salt and pepper to taste
Peel, dice and cook eggplant in water until soft. Drain all of the water away and set eggplant aside. Smash crackers into cracker crumbs or use bread crumbs if desired. Beat eggs in a small bowl. Pour half of egg mixture into the bottom of a greased 2 quart casserole dish. Place sliced eggplant on top and then finish up with the rest of the egg mixture. Sprinkle cracker crumbs on top along with salt and pepper. Bake in a 350 degree oven for 45 minutes or until done.
