We love whipping up a good tasty chicken salad especially during the summertime when I don't feel like heating up the kitchen with the household oven. This chicken salad makes a great lunch that my entire family enjoys.
Mango Chicken Salad Recipe
6 cups salad greens
2 cups fresh blueberries
1 large mango (pitted, peeled and diced)
12 oz. chicken breast
salt & ground black pepper to taste
2 Tbsp. garlic butter, softened
2 cups broccoli florets
1/2 c. bottled blue cheese Italian Vinaigrette salad dressing
crumbled blue cheese (optional)
On a serving platter arrange salad greens. Top with blueberries and chopped mango, set aside. Season chicken breast tenderloins with salt and pepper. In a large skillet cook chicken in 1 Tbsp. of the garlic butter over medium heat for 8 minutes or until done, turning once. Transfer chicken to a cutting board, slice. Arrange chicken on salad. In the same skillet cook broccoli in the remaining 1 Tbsp. garlic butter over medium heat for 4-6 minutes or until tender. Place on salad. Drizzle salad with blue cheese dressing, sprinkled with crumbled blue cheese. Makes 4 servings.
